Lemon tiramisu

Ingredients:

250g mascarpone
100g sugar
3 eggs
3 lemons (juice and zest)
200g spoon biscuits (ladyfingers)
1 tablespoon limoncello (optional)
Icing sugar for decoration
Instructions:

Separate the egg whites from the yolks. Beat the yolks with the sugar until the mixture whitens.
Add the mascarpone, zest and juice of the lemons, and mix until you get a smooth cream.
Beat the egg whites until stiff and gently fold them into the cream.
Quickly dip the cookies in a mixture of lemon juice and limoncello.
In a dish, place a layer of soaked biscuits, then a layer of lemon curd. Repeat.
Refrigerate for at least 4 hours. Sprinkle with icing sugar before serving.
